Aunt Darlene's Easy Peasy Potatoes

The last time my brother and his wife came to visit, we all stayed at my sister's house and made a big dinner. I had already eaten with Mr. Wookie before I went to visit, so I wasn't feeling especially hungry. Then I smelled the most delicious thing ever.

My sister-in-law said, "its so easy to make, and its from your people."


Its from my people? Sign me up.


The recipe didn't have a name, so I entered it into my recipe book as "Aunt Darlene's Easy Peasy Potatoes." Here's the recipe so you can try it!


Cut up russet potatoes into thin slices (maybe 1/4 inch thick).

Cut up an onion.

Cut up a green pepper into strips.
Salt and Pepper if you wish.

Place these ingredients into a baking dish (I use the pretty dish Mr. J's nanny got me) and put big dollops of butter all around the dish.

Bake on 350 for 1 hour or until potatoes are cooked.

(I used red potatoes the day I took this picture because that's all I had...and I also cut up some garlic to throw on there too. My sister said sometimes she throws carrots on it as well. What's great about this dish is that its totally up to preference, and its delish!)
